Alpenfire's Orlean's Style Vinegar, This Ancient Method or Orleans style vinegar starts with fully fermented hard cider made from apples with flavor characterics as distictive as their names, Dabinett, Brown Snout, Kingston Black, Vilberie, etc. These apples have been used for generations to produce cider with traditional tannic and spicy notes. Over 600 years ago in Orleans France this method for turning cider to vinegar was perfected. In oak casks partially filled with fully fermented cider the vinegar "mother" forms and floats delicately on the surface using oxygen and acetobacters to slowly weave alcohol into acetic acid. The slow surface fermentation maintains the aroma and flavor nuance lost in modern vinegar production.
